Chicken Cashew Lettuce Wraps

The flavor of the chicken was good, but not wow. I liked the idea of eating it inside a lettuce shell but there was just something missing.....


For the stir fry sauce:
2 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp brown sugar
1/4 tsp ground red pepper
1/4 tsp ground ginger
1 tsp sesame oil

For the cashew chicken:
2 chicken breasts, diced
1 cup onion, diced
2 garlic cloves, minced
1/4 cup cashews, chopped
salt and black pepper
iceburg lettuce
olive oil

For the stir fry sauce: Mix all ingredients together and set aside.

For the chicken: Heat a few tbsp of olive oil in a pan. Add the diced chicken and season with salt and black pepper. Brown (about 5 minutes). Remove from pan and add the onion and garlic and cook until tender. Then add the stir fry sauce and stir. Now return the browned chicken to the pan along with the chopped cashews. Saute for a few minutes then remove from heat.

Spoon the chicken mixture into individual lettuce leaves. Serve with hot sauce if desired.
