Southern Fried Catfish

Perfectly fried fish. Crisp on the outside and moist on the inside.

4 Catfish Fillets
1 cup corn meal (yellow or white)
2 tbsp flour
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne pepper
1/4 tsp garlic powder 

In large skillet, heat 1 inch of oil over medium high heat. Place corn meal and flour in medium bowl. Add salt, black pepper, cayenne, and garlic powder. Dip each fillet into the breading and coat both sides. Press down. Turn stove eye down just a little. Place each fillet in oil and cook, turning once, until browned on both sides. Transfer fish to drain on paper towel lined plate. Serve with lemon wedges and tartar sauce.
