2 tbsp yellow cornmeal
2 tbsp paprika
1 tsp thyme
1/4 tsp cayenne pepper
salt and black pepper
4 catfish fillets
lemon or lime wedges, for serving
Set the oven to broil. Spray a baking sheet lined with foil with cooking spray.
In a shallow bowl, stir together the cornmeal, paprika, cayenne, salt and black pepper. Dredge fillets in the cornmeal mixture. Turn to coat both sides. Shake of excess. Place on baking sheet and place under the broiler for 10-12 minutes.
