Mediterranean Meatloaf


Please try this meatloaf. It is really good, filled with all sorts of vegitables, and very moist. It comes together quickly on a busy day and is one recipe I highly recommend.


Ingredients:
1 lb ground turkey
2 tbs fresh chopped basil
1/4 cup fresh chopped parsley
1 cup shredded carrot
1 cup frozen peas
1 cup chopped onion
1/3 cup italian bread crumbs
1/2 cup Parmesan cheese
2 tbs chopped sun dried tomato
1 egg
1/2 tsp paprika
1/2 tsp cumin
1 tsp garlic powder
1 tsp salt
1/2 tsp black pepper
1.5 tsp ground coriander
ketsup

Directions:
Preheat oven to 375 degrees. Rinse frozen peas with water. In a large bowl mix together all vegetables, seasonings, bread crumbs, egg and cheese until well blended.  Add meat to the veggie mix and combine well with your hands.  Spray a loaf pan with nonstick spray, then form the meat mix into the loaf pan, cover with foil and place in oven for 20 minutes. After 20 minutes remove the foil and cook for another 20 minutes.  Next spread the top of meatloaf with ketsup and cook under broiler for another 3-4 minutes.  Remove from oven and let rest for 5 minutes before serving. Slice into 1 inch slices and serve with mashed potatoes and salad.
