Fish Soup


This is my mom's recipe and one you must try! I didn't get creative and add unnecessary ingredients as I sometimes do messing up the original recipe. I followed the directions exactly and boy was it delicious.

Ingredients:
1 (14.5 oz) can crushed tomatoes
1 (14 oz) can of chick peas
1/2 yellow onion, chopped
3 garlic cloves, minced
 2 cups veggie or chicken stock (I used homemade chicken stock)
2-3 tilapia fillets
1/2 to 3/4 bag of medium shrimp
1 cup mushroom
2 tbsp orzo
2 tbsp flat leaf parsley, chopped
2 tbsp fresh mint, chopped
salt and pepper
garlic powder
cumin
a dash of cayenne (optional)

Directions:
Season the tilapia fillets with salt, pepper, garlic powder, and cumin  on both sides. Heat a tablespoon or two of olive oil and a tablespoon of butter in a skillet and cook the tilapia. Transfer to a plate  and break into bite size pieces. In the same skillet, saute the shrimp with salt and pepper and cumin. Remove and set aside. Next saute the mushrooms. Season with just salt and pepper.

In a large pot, saute the chopped onions and minced garlic till fragrant. Add the crushed tomatoes and broth. Add the chick peas and orzo. Let boil. Reduce heat to medium and let orzo cook. Add the tilapia, mushrooms, and shrimp. Season with cumin and salt and pepper to taste. Add the chopped parsley and mint. (I loved the addition of the mint!) Serve hot.
