Broiled Asparagus with Orange Slices

1 lb asparagus
1 shallot, thinly sliced and separated into rings (I didn't have a shallot so I used a red onion)
1/2 orange, thinly sliced
olive oil
salt and pepper
1/4 tsp orange zest

Heat the broiler. Line a baking sheet with foil. Toss the asparagus and onion slices with olive oil, salt, and pepper. Arrange the orange slices on top of the asparagus. Broil for 6-8 minutes. Remove from the oven and sprinkle with the orange zest. Serve warm or at room temperature.

  1. Making this tonight for dinner! Along with the cornish hens with gravy and the baked rice pilaf. Great recipes.

    1. Thank you. I hope you enjoy them as much as I do!

  2. The gravy tastes really good! I didn't have poultry seasoning so I threw some fresh thyme inside each bird. And I had to use mandarin oranges as a substitute for oranges with the asparagus recipe, but I love it. So glad I discovered your site today when searching for "cornish hens with gravy" recipes! And the rice pilaf, while slightly overcooked (my fault) is really good too.

  3. Glad you liked everything. Hope you try many more.
