Ingredients:
1 lb asparagus
1 shallot, thinly sliced and separated into rings (I didn't have a shallot so I used a red onion)
1/2 orange, thinly sliced
olive oil
salt and pepper
1/4 tsp orange zest
Directions:
Heat the broiler. Line a baking sheet with foil. Toss the asparagus and onion slices with olive oil, salt, and pepper. Arrange the orange slices on top of the asparagus. Broil for 6-8 minutes. Remove from the oven and sprinkle with the orange zest. Serve warm or at room temperature.

DeleteThe gravy tastes really good! I didn't have poultry seasoning so I threw some fresh thyme inside each bird. And I had to use mandarin oranges as a substitute for oranges with the asparagus recipe, but I love it. So glad I discovered your site today when searching for "cornish hens with gravy" recipes! And the rice pilaf, while slightly overcooked (my fault) is really good too.
