I was cleaning out my fridge one afternoon and found half a bag of shrimp, one new york strip, and a bag of mixed vegetables. So I decided to use them up in a stir fry. In my pantry I had water chestnuts and red curry paste. Perfect!
Ingredients:
shrimp
new york strip
mixed vegitables
water chestnuts
red curry paste
Directions:
Heat a tablespoon of olive oil in a wok. Add a few tablespoons of red curry paste along with 2 minced garlic cloves, and a teaspoon of fresh ginger. Cook for 2-3 minutes until fragrant. Add the beef, thinly sliced. Cook for a few minutes. Add the shrimp and frozen or fresh vegitables. Season with salt and pepper. Serve with rice.
