Curried Beef and Olive Calzone


Perfect for lunch or a light weeknight dinner. 

Ingredients:
1/2 lb ground beef
1 tbsp olive oil
1/2 yellow onion, chopped
1 clove garlic, minced
salt and black pepper
1 cup spaghetti sauce
green olives
curry powder
pizza dough (or store bought)
shredded mozzarella or a mix of cheese
Italian seasoning, for the top


Directions:
Spread your pizza dough in a 9x13 rectangular baking sheet lined with parchment paper. Saute the onion and garlic in a tablespoon of olive oil. Add the ground beef and season with salt and black pepper. Once the beef is cooked, add the spaghetti sauce and let heat through. Add the chopped olives.

Spread the beef mixture over one half of the dough. Sprinkle liberally with curry powder then with the mozzarella cheese. Fold over the other half of dough and pinch the sides together to seal well. Brush olive oil over the top of the dough and sprinkle with Italian seasoning.

Preheat the oven to 350 degrees. Bake for 20-25 minutes until golden. (My oven is pretty hot so I place on the third rack so that bottom doesn't burn before it is cooked through.) Enjoy warm with a simple salad.
