Almond, Anise, and Orange Biscotti


 
 
Yes, please. I will have another one. These are so delicious. Dipped in coffee or tea or eaten alone. This cookie is perfect for anytime of the day. My mom made this weeks ago and shared the recipe with me as hers were fresh out of the oven. I made them last night and wondered why I waited so long. They are perfect. Thanks mom!
 
Ingredients:
1 cup sugar
3/4 cup vegetable oil
3 eggs
3 cups flour
1 tbsp baking powder
1.5 tbsp orange zest
1 tbsp orange juice
1.5 tbsp anise seeds
1/4 cup sliced almonds
 
Directions:
Preheat the oven to 350 degrees. Lightly oil a rectangular cake pan.
 
Beat the sugar, oil, and eggs together. Add the flour and baking powder. Once incorporated, add the orange zest, juice, anise seeds, and almonds. Beat once again on a slow speed and then transfer to the oiled cake pan (batter will be sticky).
 
Bake for 30 minutes (the top will be a golden color). Remove from oven and cut into rectangles. Place biscotti on a baking sheet lined with parchment paper.
 
Reduce the oven temperature to 250 degrees. Return the biscotti to the oven and bake for another 15 minutes. Remove from the oven and let cool. Biscotti will continue to dry as it cools.
