I love this dish! It is so easy to make and is one that you can serve to a crowd and everyone will be pleased.
4 boneless chicken breasts
1/2 cup milk
Salt and black pepper
Italian bread crumbs
3 tablespoons olive oil
8 slices fresh mozzarella cheese
1 jar spaghetti sauce
Whisk together the egg, milk, salt, and black pepper. Dip the chicken breasts in milk and egg mixture and then in the bread crumbs. Heat olive oil in a large skillet over medium-high heat. Brown the chicken in the hot oil on both sides until golden, about 3 to 4 minutes on each side. Transfer chicken to a baking dish.
Pour your favorite spaghetti sauce over the chicken. Put two slices of mozzarella cheese on each chicken breast. Sprinkle with Parmesan cheese and bake at 350° for 30 minutes. Serve with spaghetti, garlic bread and roasted vegetables, or a side salad.
