Spicy Lemon Garlic Shrimp

This is our new go-to recipe for shrimp. It was excellent with french bread and would also be delicious over pasta (Maybe use 1 stick of butter, more lemon juice, cilantro, garlic, and spices for extra sauce to pour over the pasta.) Another idea would be to serve this over a bed of greens with garlic croutons and shaved Parmesan cheese. YUM!

Serves 2

1 lb raw frozen shrimp, with tail on
5 tbsp unsalted cold butter, cut into pieces
1/4 cup cilantro
3 small garlic cloves
1/2 of a lemon juiced
1/4 tsp crushed red pepper flakes
1/2 tsp salt

Preheat the oven to 375 degrees. Line a baking sheet with foil. Rinse the frozen shrimp with water to separate. Arrange in a single later on the baking sheet.

In a food processor, add the cold butter, cilantro, garlic, lemon juice, crushed red pepper, and salt. Pulse until combined. Sprinkle over the shrimp.

Bake for 10 minutes until shrimp is opaque and the butter mixture is hot and bubbly. Serve with hot crusty bread.
