This is a very easy recipe to make and very easy to tailor to the vegetables you have on hand. The simplicity of just salt, black pepper, and olive oil is what makes this side dish a hit!
Squash, skin peeled
Preheat the oven to 375ºF. Put the vegetables in a large bowl and drizzle generously with olive oil and season with garlic powder, salt, black pepper, and Italian seasoning. Transfer them to a foil lined baking sheet in a single layer.
Cook for 30 minutes or until tender.
