Avocado and Egg Salad

4 hard boiled eggs, peeled
1 avocado, peeled
1 tbsp mayonnaise
1 tsp red wine vinegar
black pepper to taste

Combine all ingredients in food processor.  Pulse a few times until the salad reaches the consistency that you want, smooth or chunky. Serve on a tomato, or even toast.
