Herbed Goat Cheese and Cucumber Sandwiches and a BABY Shower!

These sandwiches were served at my Sister's baby shower along with many more yummy snacks such as veggie cups, chicken salad in filo cups, carrot salad, pastel sugar cookies, fresh fruit (pictured below) and strawberry cupcakes with strawberry cream cheese frosting.

10 1/2 oz. mild goat cheese, at room temperature
8 oz. low-fat cream cheese, at room temperature
3 tbsp fresh parsley
1/2 tsp fresh thyme
2 cloves garlic, minced
5-6 tbsp milk
1/2 tsp black pepper

1 loaf of 7-grain bread or rye bread
1 cucumber, unpeeled

To make the spread: Place the cream cheese, goat cheese, garlic, thyme, parsley, 5 tablespoons milk, salt, and pepper in the bowl of an electric mixer fitted with the paddle attachment. Beat on medium speed until well mixed. Add an additional tablespoon of milk if the spread is very thick.

To make the sandwiches: spread each slice of the bread with the goat cheese spread. Slice the cucumber into thin rounds and arrange on half of the bread slices. Top with the remaining bread and press slightly. Cut the sandwiches into halves, thirds, or triangles.
