Classic Meatloaf with Sweet Ketchup Glaze


For the glaze:
4 tbsp ketchup
½-1 tbsp Dijon mustard
1-2 tsp light brown sugar

For the meatloaf:
1 pound ground beef
1 small onion, finely chopped
3 tablespoons ketchup
1 egg
1 slice white bread, torn into pieces (or a handful of breadcrumbs)
½ teaspoon salt
½  teaspoon freshly ground black pepper 

In a small bowl, whisk together all the glaze ingredients and set aside.  

In a large bowl, combine all the meatloaf ingredients and mix well. Press the mixture into a 9 by 5-inch loaf pan. Bake on 350 degrees for 20 minutes. Remove from the oven and brush the glaze over the top of the meatloaf. Bake for 20 minutes more.
