Chicken Spread

WOW.  Super fast to make and so good!

12.5 oz. canned chicken, drained
8 oz. cream cheese, at room temperature
2 tbsp mayonnaise
1/4 cup yellow onion, finely chopped
1 kosher dill pickle spear, finely chopped
1 stalk celery, finely chopped
a dash of salt and black pepper

Blend all ingredients together with an electric hand mixer until combined and creamy. Serve with your favorite cracker. Or make a sandwich and top with arugula.
