Soy Marinated Beef Skewers with Cilantro-Lime Sour Cream


Ingredients:
1/3 cup soy sauce
2 tbsp brown sugar
a pinch of salt
2 large cloves garlic, minced
1/4-1/2 tsp red pepper flakes
juice and zest of half an orange
1 lb flank steak cut into 1/2 inch long strips
handful of cilantro, chopped
1/2 cup sour cream
juice of 1 lime

Directions:
Whisk together the soy sauce, sugar, salt, garlic, red pepper flakes, and orange juice and zest. Add the beef. Let marinate in refrigerator for 3-4 hours. Heat grill to medium-high. Brush the grill with cookign spray. Grill the meat until browned and done to your liking. (If you are going to use wooden skewers, soak them in water for 30 minutes before putting the meat on it and grilling.)

For the dipping sauce:
Combine the sour cream, lime juice, and half the cilantro in a bowl. Add a pinch of both salt and black pepper.

Serve beef skewers over steamed rice, garnish with the remaining cilantro, and a dollop (or two) of sour cream.
