Strawberry Salad



Lately, the blogging world has been all about lighter recipes.  Salads, fresh fruit, and tender green vegetables are making their way in along with the warmer weather. I saw this salad on several blog posts a few days ago.  It is a very simple and yummy salad highlighting the strawberries.  

Ingredients:

For the dressing
1 cup fresh strawberries, sliced
1.5 tbsp pomegranate champagne vinegar*
1 tbsp. sugar
Pinch of salt

For the salad
Arugula and Spinach mix, rinsed and dried
Sliced almonds, walnuts, or pecans
Sliced fresh strawberries
Crumbled goat cheese

Directions:
In a blender or food processor, combine the strawberries, champagne vinegar* (made from pure fruit essences. You can substitute any mild vinegar), sugar and salt.  Process until the mixture is well combined and completely smooth.  Transfer to an airtight bottle or container and refrigerate until ready to use.

To serve, portion baby spinach leaves and arugula out on salad plates.  Drizzle with the strawberry champagne vinaigrette.  Top with sliced almonds, walnuts, or pecans, sliced strawberries, and crumbled goat cheese.
