Corned Beef Hash



"It is amazing, and you will not regret it!"

Ingredients:
1 large idaho potato
1 green bell pepper
1 medium yellow onion
1/2 pound of deli corned beef
salt
black pepper
garlic powder
dill
olive oil

Directions:
Chop the potatoes into roughly 1/4 in. cubes. Chop the bell pepper, onions, and corned beef to approximately 1/4 in. squares. 

In a large sauce pan (non stick if you have one), add 1 tbsp olive oil and brown the potatoes for 10-15 min. seasoning with salt, pepper, garlic powder, and a little dill. Add the bell peppers, and cook for 2-3 min. Add the onions and season that mixture with more salt and pepper, adding olive oil as needed so that it doesn't look too dry (~ 0.5-1 tbsp more). Let that simmer for 5 minutes.

Once the potatoes have started to soften, add the corned beef, and cook until the corned beef is nicely browned. Transfer to serving bowls and add ketchup. If you really wanna take things to the next level, make 1 egg over medium to top the hash.
