Thai Peanut Dressing

This dressing turned out really really good. Perfect blend of peanut butter, spice, and sweetness.

3  tablespoons  water
2  tablespoons  rice vinegar
2 teaspoons honey
2  tablespoon crunchy peanut butter
1  tablespoon  low-sodium soy sauce
1  teaspoon  grated peeled fresh ginger
1  teaspoon  Sriracha (hot chili sauce)
1  teaspoon sesame oil
a squirt of lemon juice

Combine all the ingredients in a blender. Process until smooth. Drizzle dressing over fresh green salad. Serve with sushi.
