This salmon recipe was absolutely delicious and very simple to put together. The combination of the salmon with the pesto and the flaky puff pastry was excellent. Add some almonds for a nice crunch and a sliced tomato to tie it all together, and you have a great meal. I served the salmon puffs tonight with fried okra and a salad. Now time for dessert, but I don't have anything....... I guess I will have to just settle for hot chocolate. Enjoy!
1 sheet frozen puff pastry, thawed
2 salmon fillets
salt and pepper to taste

1 tomato, sliced

Preheat the oven to 400 degrees. Line 2 baking sheets with foil or parchment. Unfold the puff pastry sheet on a cutting board and use a sharp paring knife to cut 2 squares or rectangles slightly larger than the size of the salmon. Prick each square all over with a fork. Place the squares on the first baking sheet.
Season the salmon with garlic powder, salt, and pepper. Drizzle with olive oil. Place on the second baking sheet.
Bake both at the same time side by side for 10-12 minutes, or until the pastry is puffed and golden brown and the salmon is firm. Place a piece of pastry on each plate. Top with pesto. Lay 2 slices of tomato over the pesto. Top with the salmon and sprinkle with almonds.
