Flank Steak Fajitas


Ingredients:
Flat pita bread
Flank Steak
1/2 yellow onion, cut in srips
1 green bell pepper, cut in strips
a splash red wine vinegar

 Marinade for steak:
2 tbsp olive oil
1 tbsp spicy brown mustard
1 tsp lemon juice
1 tbsp cilantro
3 cloves of garlic, minced
steak seasoning
chilli powder
salt and pepper 


Directions:
Preheat the oven to 375 degrees. Line a baking sheet with foil. Season the steak with salt and pepper and place on baking sheet.

For the marinade, combine the olive oil, mustard, lemon juice, cilantro, garlic, steak seasoning, and chilli powder. Whisk unitl incorporated. Cover the top of the steak with the marinade and refrigerate for 30 minutes. Cook the steak for 30-40 minutes depending on how you like it. Cut in to 1/2  inch strips.

While the steak is cooking, saute the onion and bell peppers in a little olive oil. Season with salt and pepper and when almost done, splash a little red wine vinegar and mix. Set aside.


Tomato Mix:
2 small tomatoes, diced or cut in strips
a splash of lemon juice
cilantro
a splash of olive oil
salt and pepper
1 clove of garlic, minced

Directions:
For the tomato mix, combine the tomatoes, a splash of lemon juice, cilantro, olive oil, garlic, salt, and pepper. Set aside.


Heat the pita bread in the oven. Assemble the steak, the veggies, and then the tomato mix. Top with shredded cheese and sour cream (not pictured).
