Whole Baked Tilapia and Fried Calamari


Ingredients:
2-4 whole tilapia
tomato
bell pepper
onion
lemon

 for the filling:
a handful of cilantro
1 tbsp olive oil
1 tbsp lemon juice
1 tsp salt
1 tsp pepper
1 tsp cumin
4-5 garlic cloves
a dash of red pepper
1/4 cup shredded carrots

Directions:
Wash the fish under cool water making sure the inside is clean. In a food processor, combine all the ingredients for the filling and blend well. Divide the filling among the tilapia and stuff the inside. Top with sliced tomatoes, onions, bell pepper, lemon wedges. Drizzle olive oil on top and season with more salt and pepper. Bake at 350 degrees for 30-45 minutes. Serve with rice, tahini dip, and salad.


 Fried Calamari

Ingredients:
2 cups squid cut into rings
oil for frying
buttermilk
hot sauce
flour
oregano
paprika
salt and pepper
lemon juice

Directions:
Soak the squid in buttermilk and hot sauce for 2 hours. Season flour with salt, pepper, oregano, and paprika. Dredge the squid in the seasoned flour and fry in the hot oil until golden brown. Drain on a paper towel and squeeze lemon juice on top.
