1 small onion
1 lb cubed beef
salt and black pepper

(14.5 oz) can crushed tomatoes
1/2 of a (10 oz) box of frozen spinach
1 tbsp butter
1/2 of a (10 oz) box of frozen spinach
1 tbsp butter
2 large cloves of garlic, minced
1 tsp ground corriander
Directions:
Heat the olive oil and butter in a medium pot. Saute the onions until soft. Add the cubed beef. Season with salt and black pepper. Brown the meat on both sides. Add the crushed tomatoes. Cook for 30 minutes. Add the frozen spinach.
In a small sauce pan, melt 1 tbsp of butter and add the minced garlic and ground corriander. Cook for 30 seconds then add to the stew. Season with more salt and black pepper. Continue to cook the stew until the beef is tender. Serve over rice.
