So good!
I got a second shot this week at re-creating another recipe I grew up eating. Last night I made mom's beef macaroni exactly as she directed and it was amazing. We have left overs and I can't wait to re-heat for lunch today. So here it is.....
Ingredients:
1/2 lb 80% lean ground beef
2 cups ditalini pasta, uncooked
Spaghetti sauce, garden veggie flavor
3 cloves garlic, minced
1/2 small onoin, finely chopped
crushed red pepper flakes
oregano
chilli powder
salt and pepper
Directions:
Bring a salted pot of water to a boil. Drop in the pasta and add a few drops of olive oil. Cook and set aside. Heat 1 tbsp olive oil in a pan. Add the onion, garlic, and red pepper flakes. Saute for a few minutes. Add the ground beef, salt and pepper, oregano, and chilli powder. Cook on medium heat. Stir in as much of the spagheti sauce as you like and let heat through. Toss the beef mixture with the cooked pasta. Serve in bowls with a side salad. Enjoy!
